If you have searched for the “most hygienic chopping board”, you have probably run into the same confident, contradictory advice everywhere: plastic is more hygienic because you can bleach it and put it in the dishwasher; no, wood is more hygienic because it kills bacteria. Both cannot be right.

The evidence is clearer than the arguments suggest — and it has been for thirty years. This article walks through what the food-safety research actually found, why the plastic-is-safer assumption took hold, and how hygiene interacts with the separate problem of microplastic shedding. The Study That Overturned the Assumption

For decades, home cooks were told to switch to plastic boards for food safety. The turning point was a body of work led by microbiologist Dean Cliver and colleagues at the University of Wisconsin–Madison.

In Cutting Boards of Plastic and Wood Contaminated Experimentally with Bacteria (Ak, Cliver and Kaspar, Journal of Food Protection, 1994), the researchers applied disease bacteria — E. coli, Salmonella typhimurium, Listeria monocytogenes and Listeria innocua — to new and used boards made of four plastics, hard rubber and nine hardwoods.

The results ran against the conventional wisdom:

  • On wooden surfaces, the bacteria were drawn into the wood and could not be recovered a short time later, unless enormous numbers were applied. Whatever went into the grain did not come back out alive.
  • On new plastic surfaces, bacteria survived on the surface — but the boards were easy to clean and disinfect.
  • On used, knife-scarred plastic, the boards were difficult to clean manually, especially when contaminated with something like chicken fat.

Their companion paper, Decontamination of Plastic and Wooden Cutting Boards for Kitchen Use (Journal of Food Protection, 1994), reached a blunt conclusion: the often-heard assertion that plastic cutting boards are more sanitary than wood is not supported by the evidence. Cliver later continued this line of work at the University of California, Davis, where his findings on bacteria being absorbed into wood grain and not multiplying became the reference point still cited today.

This is not a settled-and-forgotten debate. Researchers continue to test the two materials in real kitchens — including a 2025 study on the handling practices and microbiological assessment of wooden and plastic cutting boards in domestic kitchens — which keeps the practical question alive: how a board is used and cleaned matters as much as what it is made of.

Why the Plastic Myth Persisted

The plastic-is-safer idea was not baseless — it was just incomplete. It rests on one true fact: a brand-new, unscarred plastic board is smooth, non-porous and easy to clean. In that pristine state, plastic is microbiologically neutral and simple to disinfect.

The problem is that plastic boards do not stay new. Every cut leaves a scar, and those scars accumulate into a rough, grooved surface that is hard to clean by hand — the exact condition where the Wisconsin researchers found bacteria surviving. The comparison people imagine (new plastic vs old wood) is not the comparison that happens in a real kitchen, where both boards age together and the plastic develops the scarring that undermines its one advantage.

Wood behaves differently as it ages. Its grain closes around shallow cuts, and its natural structure draws moisture — and the bacteria in it — below the surface, where the research shows they do not thrive. Wood also contains natural antimicrobial compounds such as tannins.

The Hidden Overlap: Knife Scars Do Double Damage

Here is the connection that most hygiene guides miss. On a plastic board, the knife scars that harbour bacteria are the same scars that shed microplastics.

A 2023 study by North Dakota State University, published in Environmental Science & Technology, measured microplastic release from plastic boards and modelled what it adds up to: an estimated 7.4 to 50.7 grams per person per year from a polyethylene board and 49.5 grams a year from polypropylene, based on assumptions the authors state. Chopping carrots released more than chopping without them.

The study did not test how board age affects shedding, so we will not claim it measured that. But the mechanism points the same way as the hygiene evidence: shedding comes from the knife shearing material off the surface, and a scarred surface is a surface that has already been shorn.

So a well-used plastic board fails twice over:

  • The scars are difficult to clean and can harbour bacteria (the hygiene problem).
  • The same scars are actively releasing plastic particles into your food (the microplastic problem).

Hygiene depends more on a board’s condition and your cleaning habits than on its material category. But holding condition and cleaning constant, here is how the materials stack up on the evidence:

The two standouts:

The Dishwasher Trade-Off

Dishwashers run at 55–75°C with alkaline detergents and sustained water exposure. That heat is a genuine sanitising tool — but not every board survives it:

  • Solid wood and bamboo: never dishwash. The heat and prolonged wetting warp and crack them and strip the natural oils that support their antimicrobial behaviour. Hand washing and drying upright is the correct routine.
  • Plastic: survives mechanically, but each hot cycle accelerates surface degradation, deepening the scarring that both harbours bacteria and increases microplastic shedding. Passing the dishwasher test is not the same as being improved by it.
  • Wood-fibre composite (Richlite / Epicurean): engineered to tolerate dishwasher conditions, so it can be heat-sanitised repeatedly without degrading. This is its main hygiene advantage over solid wood.

When to Replace Any Board

Whatever the material, once a board is heavily scored and difficult to clean it can no longer be properly sanitised and should be replaced — the UK Food Standards Agency stresses always using a clean chopping board to avoid cross-contamination. Deep grooves are the common failure point across every material: on wood they can sometimes be sanded smooth; on plastic they are permanent and, as the shedding research shows, worsening with age.

Practical signs it is time to replace a board:

  • Deep grooves or splits that will not clean out or sand smooth
  • Warping, so the board no longer sits flat
  • Persistent odours or staining after a proper wash
  • On plastic specifically: a visibly rough, whitened surface from accumulated scarring
